I also love the fact that these cookies are not perfect looking, much like me. It’s got to have not more than four ingredients though…Lol! I only do cookies that are simple and tastes good. Not sure why I haven’t created a recipe book full of cookies yet. So you can imagine how much I loved baking these Pecan Shortbread Cookies. Let the cookies defrost completely before serving.I should be the queen of cookies, I am literally obsessed with cookies. Baked cookies can keep for months in the freezer if completely sealed from the air, but best to eat them after 3 to 4 weeks. Place wax paper or parchment sheets between layers. Be sure they are completely cooled, and place them in an airtight plastic container (again, labeled with the name and date). Then, flatten the dough with a glass before baking as directed.īaked butter pecan cookies will keep in an airtight container at room temperature for a few days. When you're ready to bake the cookies, let the dough thaw on a baking sheet while the oven preheats. (We recommend writing the bake time and temperature on the outside of the bag, because who can remember anything once it goes into the black hole of the freezer?) Once they're firm, place them in a zip top bag for up to 3 months. First freeze them in a single layer, to keep them from sticking together.
